

1 red pepper
1 yellow pepper
1 onion
couple of handfuls of mushrooms
1 can chopped tomatoes
1 can mixed beans/pulses
4 cloves garlic
1 tsp basil
Chop veg and put all ingredients except beans in a pot.
Cook on a medium heat for 15 minutes.
Add beans and cook for a further 5 minutes.
Serve with pasta (or wholemeal pancakes), top with cheese (optional).
