Peanut Butter Cookie



250g self raising flour
1/2 tsp baking soda
1/4 tsp salt
275g brown sugar
250g white sugar
225g butter, softened.
3 eggs
260g smooth peanut butter
2 tsp vanilla essence

Preheat oven to 150 degrees c.
Combine flour, baking soda and salt. Mix well.
In another bowl blend sugar together. Add butter and mix to form a grainy paste.
Add eggs, peanut butter and vanilla to sugar mixture and mix until light and fluffy.
Add the flour and mix well.
Drop ping pong ball sized lumps unto a baking tray. With a wet fork gently press in a criss crossed pattern. (at this point I sprinkled some chocolate chips over mine)
Bake for 18-22 minutes or until slightly brown around the edges.
